Julio Velasquez comes to Sage Bistro as the former Master Chef of Bistro Cassis in Huntington, NY. As the Chef since its’ inception 5 years ago,
Julio applied his creative, yet balanced approach to flavor and cooking to make Bistro Cassis one of Zagat’s top rated Bistros on Long Island.
He is excited to now bring his hard work ethic and passion for cooking to Sage Bistro in Bellmore, NY.
Mr. Velasquez is a native of Poloros, El Salvador. After coming to the United States in 1991, he trained with such renowned chefs as
Michael Maroni of Maroni Cuisine in Northport and Matthew Hisiger of Panama Hattes in Commack. Other venues of experience include Calamari Kitchen (Now Fiddleheads) of
Oyster Bay, and Cool House of Blue in Manhattan. Most recently before Bistro Cassis Julio was the Master Chef at Enoteca in Locust Valley.
Onur Peter Oktas started his career at the Kempinski Hotel in Istanbul, Turkey, where he was the restaurant head manager for seven years.
Peter then traveled to the United States to work as an assistant food and beverage manager in the world famous Times Square Marriott Hotel. The next stop on his
journey was Bistro Cassis in Huntington, NY, where he met Chef Julio Velaquez. While there, Julio and Peter established their working relationship which built the
foundation for their partnership today.
In addition to being on the staff at Bistro Cassis, Mr. Oktas was chosen to help manage Bistro Citron in Roslyn, NY, and Bistro St. Germain in Mineola, NY. During his stay in the United States Peter has also earned an associates degree in Business Management from State University Of New York College At Oldwestbury. Most recently Peter served as the head manager in Huntington’s well established Macs Steak House. He is now honored to bring his knowledge and experience to Sage Bistro.
